Abstract     In the previous papers it has been shown that the PSE-muscles could be identified by measuring the impedance phase angle at a frequency of about lSkHz. However, statistical investigations have revealed a rather low correlation and some practical problems such as the electrode distance and positioning, the influence of fat in meat pieces etc. The new apparatus "CARNETEST III" permits the measurement of the phase angle, as well as of impedance magnitude. This allows the scale to be enlarged in lower for PSE-characteristic areas and the control of the position of electrodes. The results are displayed by a 3 1/2 digit LCD-display. With reference to previous findings, the new model of electrodes has been developed and tested (one bipolar electrode or two electrodes with adjustable distance). It has been shown that there exists the possibility of determining properties of skeleton muscles in different animals with a significantly high correlation, using this quick and simple method of measurement.
