Abstract     Caries is a chronic disease where different ethiologic factors act together and as a consequence hard dental tissue loss occurs. Preventive measures (fissure sealants, topical fluoride application, systemic fluoride administration) fulfiled our requirements only partially. Consumption of the cariogenic food is one of the main factors that inhibit faster decay loss in our country. The cariogenicity of foods is just one of a number of factors which determine whether clinical caries develops or not. Changes in human dental plaque pH can be used to obtain estimates of the acidogenic potential of ingested foods. The aim of our study was to monitor the pH changes in dental plaque, using the sampling method when sucrose and sorbitol were consumed. In our study 18 dental students were involved which performed no oral hygiene 48 hours prior to experiment. pH changes in dental plaque were monitored using the sampling method. Flat surface glass pH electrode (Orion research) was used that was connected to digital pH meter. The results show, that there is significant difference in pH min, when sucrose and sorbitol were compared.
