Abstrakt     Epithelium of gastrointestinal tract is covered with mucus in form of viscoelastic gel. Mostly responsible for rheological properties of mucus are the basic hydrated molecules of glykoproteins. The structure of sigma mucin was investigated using rheometry and electron paramagnetic resonance. The results have shown that the addition of inorganic (sodium chloride) and organic (glucose, acetilcysteine) compounds influences the rheological behaviour of Sigma mucin dispersion. A 20 percent reduction in apparent viscosity of 25 percent dispersion after addition of sodium chloride and approximately 7 percent reduction after addition of acetilcysteine was observed; after addition of glucose a 15 percent increase was observed. Different amounts of additives do not influence the viscoelastic parameters significantly. With higher temperature the viscosity decreased. Flow curves indicate the non-Newtonian systems with higher thixotropy. EPR measurements confirmed that additives did not change the internal arrangement of Sigma mucin molecules significantly: rotational correlation times of spin labelled molecule stayed in the same order of magnitude (approximately 1 x 10 power on -10 s).
