Abstrakt     The first part of this contribution describes the molecular features which allow a molecule to initiate a sweet sensation in man. The model proposed by Tinti and Nofre assumes the exsistence of eight recognition sites on the receptor, with the capacity to identify eight complementary and optional interaction sites in sweetener. So they were able to explain interactions of structurally very versatile molecules as well as the non selective inhibition of the sweet sensation. In the second part various sweeteners (especially saccharin, cyclamate, aspartame, acesulfame and thaumatin) are compared with sucrose mainly chemically but at least partially also from nutritional and medical point of view.
