Abstrakt     The drinking water that comes into contanct with foods should meet at least the bacteriological standards for drinking water. In Slovenia standards for drinking water are in accordance with WHO Guidelines for drinking water and Directives of European Community. Milk and milk residua are an excellent culture medium for many kinds of microorganisms, therefore a special care is to be taken to avoid spoilage of milk and milk products by "normal water bacteria", as are gas production, proteolysis, ropiness, alkali production, changes in milkfat and flavor.
