Abstrakt     The minimal criteria for the judgement of food (fit for human consuption, conditionally fit, fit but of inferior quality, unfit) in emergency situations are elaborated. Considering those criteria meat and organs of pigs and horses are evaluated i.e. judged regarding the viral, bacterial, fungal and parasitic diseases, metabolic diseases, and affections of specific parts. Considering these criteria-meat, minced meat, cured meat products (like ham) and canned meats - regarding the processses of spoilage and quality devations are judged. As our Yugoslav meat-hygiene regulation does not deal - regarding the judgement - with all infections and other diseases of slaughter animals, which can break out nowadays, the proposals for the respective supplement i.e.completion of the valuable regulation are also made.
