Abstrakt | We examined 44 samples of fresh minced meat (beef and pork), 28 samples of raw meat for "čevapčiči", 25 samples of raw sausages, 57 samples of mechanicallydeboned poultry meat and 23 samples of fast fermented lasted sausages (prior to drying). Listeria monocytogenes was determined in 3 of the minced meat samples (6.81 %), 3 samples of the raw "čevapčiči" (10.71 %), 4 raw sausage samples (16.0 %), 9 samples of mechanically-deboned chicken meat (15.78 %) and 1 sample of the fast fermented lasting sausages (4.34 %). We present our analysis of the results, and suggestions for reducing contamination levels and protecting the consumer from L. monocytogenes alimentary infections. | |
Izvleček | Preiskali smo 44 vzorcev svežega mletega mesa (goveje in svinjsko), 28 vzorcev zmesi za čevapčiče, 25 vzorcev pečenic, 57 vzorcev mehanično odkoščenega perutninskega mesa in 23 vzorcev hitrofermentiranih trajnih klobas (pred sušenjem). L. monocytogenes smo ugotovili v 3 vzorcih (6,81 %) mletega mesa, 3 vzorcih (10,71 %) zmesi za čevapčiče, 4 vzorcih (16,0 %) pečenic, 9 vzorcih (15,78 %) mehanično odkoščenega perutninskega mesa in 1 vzorcu (4,34 %) hitrofermentiranih trajnih klobas. Predstavljena je analiza rezultatov ter predlogi za zmanjšanje kontaminacije in zaščito potrošnikov pred alimentarno okužbo z L. monocytogenes. | |
