Abstrakt     Hops (Humulus lupulus L.) has been used as an additive to beer for several centuries. It gives beer its bitter taste and pleasant aroma. Quality of the final product - beer depends also on the cultivar (variety) of hops used in the process. It has been known for a long time, that the composition of the essential oil and other secondary metabolites depends on hop variety, growing conditions as well as on production and processing technologies. This work presents a new procedure, developed to allow determination and verification of hop varieties grown in Slovenia on the basis of gas chromatography of their essential oil. The method for essential oil preparation by steam distillation was optimized and the headspace solid-phase microextraction (SPME) method for analysis of hop volatiles was introduced. From hundreds of components of hop essential oil, the 16 selected for further processing, were those with relative abundance in the essential oil depending mostly on the hop variety and less on other factors, like ageing. The reference database on essential oil composition of hop cultivars most commonly grown in Slovenia (Aurora, Bobek, Celeia, Magnum and Savinjski golding) was established. We have determined and verified the varieties of hop samples using cluster analysis and principal components analysis.
