Abstrakt     The microbiological control in the milk processing industry is meant to check the quality of raw miik, the success of the heating treatment and to detect the secondary contamination during the process. It is based on the detection of the presence of indicator microorganisms. Its main purpose is the validation of preventive assurance systems to assure quality and microbiological safety of final products.
