Abstract     Patulin in apple juice, pesticides in apples, »mad cow« disease and dioxins in foods are some examples of chemical hazards from the near past that have pointed out the importance of controlling chemical contaminants to provide safe food. In this article, some of the natural (mycotoxins), environmental (heavy metals, nitrates, polychlorinated biphenyls, dioxins) contaminants and other chemical hazards (pesticides), and prions are presented. Furthermore, some of their major properties, toxicity and the possibilities to enter human food chain are listed. Regulations and control of selected chemical contaminants in foods in Slovenia are presented in the last section of the article.
