Abstract     Apart from health appropriateness of food and drinking water, the goal of producers consumer's demands and general requirement of food coutrol is also a high microbiological quality. Microbiological criteria enable us to get the insight of the food safety. They can be laid down in the form of a standard included in a legislation and consequently become mandatory for the producer. Failure to comply with Ihem can result in rejection of Ihe food. Health appropriateness of food (including microbiological criteria) in Slovenia is controled by two ministries: Ministry of Health and Minishy of agriculture, forestry and food. Microbiological criteria in EU legislation concerning food of animal origin are numerous, varied and laid down in different formats.
