Title     Bioelectric and physico-chemical properties of white and red muscles in chickens

Abstract     In slaughtering conditions the possibilities of white and red chicken muscle property determination by using our tester "Carnetest III" have been analysed. The values of impedance module and phase angle were measured in 162 chickens, hybrid "Hybro", 49 days old with an average weight of 1600 g. Bioelectric data were compared to physico-chemical properties of red and white muscles. The median of the phase angle in m. pectoralis was 23 degrees and in m. biceps it was lower varying from 15.2 to 17.8 depending on the measurement technique (across or along the muscle fibres). The differences agree with physico-chemical findings. The average values of pH and the fat content were 6.58 and 2.18 per cent in red muscles and 5.75 and 0.56 per cent in white muscles, respectively. Higher values of pH and fat content in red muscles are in good correlation with lower bioelectric values. The results and statistical test show that using "Carnetest III", it is possible to determine the quality of different muscle groups in different animals as well as to establish normality criteria.
