Abstract     In the article the most frequent forms of physical instability in emulsions are discussed; concerning simple liquid emulsions containing one or more surfactants as well as complex multiple phase semisolid systems. The stability of the last is increased because of the mostly structured external phase. The mechanism of stabilization is explained through monomolecular surfactant film, steric stabilization with polymers, by means of solid particles and through liquid crystals formation. In the last part of the article the methods for stability are given: stress conditions (elevated and decreased temperature, mechanical burdening - centrifugation), rheological measurements, particle size analysis, electrical techniques, turbidity determination and dynamic differential calorimetry.
