Abstract     Electron spin resonance (ESR) was used to study the interaction of carnosine andits derivatives with free radicals. In a model system, production of OH radical adduct of a spin trap is found to decrease significantly in the presence of carnosine. The effect has a pronounced concentration dependence. Comparisons were made with the effects of other histidine-containing dipeptides; anserine, homocarnosine and acetylcarnosine were found to have analogous effects.
