Abstract     The aim of the present work was to study the structure of semisolid W/O emulsion systems containing silicone surfactant and cellulose ether hydrocolloids as internal phase. The systems were examined by means of rheology, differential scanning calorimetry (DSC) and transmission electron microscopy (TEM). The incorporation of hydrocolloids instead of purified water influenced the rheological behavior: the plastic flow was exhibited. No significant differences of storage (G') and loss modulus (G") values were observed by non destructive oscillatory technique. The temperature of water freezing shifted toword homogeneous nucleation temperature (about -40 degrees C); the freezing peak at -20 degrees C, prevailing in the systems without cellulose ether hydrocolloids, disappeared.
