Abstract     For some commercial samples of honey determinations were made of the mass percentage of ash and some dominant elements in the ash, refractive index, density, viscosity and specific electrical conductivity of 20 per cent aqueous solutions of honey. We found that the specific electrical conductivites of 20 per cent aqueous solutions of honey are different and that a simple linear relation between specific electrical conductivity and ash content exists. With the assumption that the dominant elements in honey are in simple ionic form, we calculated the specific electrical conductivity of 20 per cent aqueous solutions of honey and found them to be greater than those experimentally determined. From this we concluded that the dominant elements in the samples of honey investigated are not entirely in ionic form, but are probably in the form of coordination complex with simple sugar molecules or covalently bonded to oxygen atoms.
