Abstract     Tannic acid as well as Farmatan reduce the activity of proteolytic digestive enzymes. It is evident, that the inhibitory activity of tannins is pH dependent. After tanin incubation at low pH their inhibitory capacity was reduced 10-30%. The inhibitory efficiency is higher when the standard enzyme solution was treated with tannins than the inhibition of enzyme activity of crude homogenate in the solution may be expected, therefore their inhibitory properties seem to be highly dependent on the total concentration of proteins in the solution examined. We may conclude, that tannin concentrations able to inactivate the enzyme activity in vitro have low or none antinutritional effect in vivo.
