Abstract     The atherosclerotic process begins in earliest childhood and does not manifest itself fully before the middle and late periods of life. Consequently, it is necessary to introduce dietetic prevention of such diseases as early as possible. Besides excessive and fatty food - containing more than 30% fat and more than 10% unsaturated fatty acids in daily energy requirements, also smoking, stress, alcoholic beverages and physical inactivity are participants in the development of atherosclerosis. In prevention of atherosclerosis, the protective substances contained in fruit and vegetables also play an important part. The protective diet should include a daily amount of 300 - 400 g fruit and/or vegetables.
