Abstract     In twenty six to porcine stress syndrome unsusceptible pigs of four breeds (German Landrace, Duroc, Swedish Landrace, Large White) the influence of the histochemical composition of the m. longissimus dorsi and m. biceps femoris on the postmortem glycolysis in both musclec was determined. All pigs had been previously tested on the point mutation of the RYR1 gene, which is responsible for the porcine stress syndrome. Pearsons test of correlation between percentages of muscle fibre types and pH1 showed negative interdependence between the percentage of fast contracting glycolitic fibres and pH1 in both muscles. The pH fall of the muscle tissues is in Duroc boars which had bigger proportinos of slow and fast contructing fibres with the oxidative capacity was less intensive as in other pig breeds. We suppose that elimination of pigs which are carriers of the mutated RYRž gene will not solve the problem of the muscle tissue acidity after the slaughter. The histochemical profile of some muscles has also influence on the rapid and intensive meat pH fall after the slaughter.
Summary     Pri šestindvajsetih prašičih z divjim RYRž genom štirih različnih pasem (nemška deželna, durok, švedska deželna, velika bela) smo ugotavljali vpliv histokemičnega profila najdaljše hrbtne mišice (m. longissimus dorsi) in dvogalve stegensk mišice (m. biceps femoris) na intenzivnost postmortalne glikoze v omenjenih mišicah. Vsi prašiči so bili poprej testirani na prisotnost točkove mutacije RYR1 gena, ki je odgovorna za prašičji stresni sindrom. Test korelacije med številčnimi deleži posameznih tipov vlaken in pH1 vrednostjo kaže negativno soodvinost med deležem hitro krčljivih glikoličnih vlaken in vrednostjo pHž pri obeh mišicah (p<0,05). Pri primerjascih pasme durok, ki imajo nekoliko večji delež počasi in hitro krčljivih vlaken z izraženo aktivnostjo oksidativnih encimov, je padec vrednosti pH1 manj izrazit kot pri ostalih pasmah. Domnevamo, da z izločanjem prašičev, ki so nosilci mutiranega RYRž gena, problem zakislitve mišičnega tkiva ne bo rešen, saj na pojav vpliva histokemični profil posameznih mišic oz. mišičnih skupin.
