Abstract     In dietetics protein foods including meat (red meat, poultry and fish) are very important. Adequacy of particular item in illness and injury depends on proteins' content, amino acids' composition and quality, hidden fats, vitamins and minerals' content, its texture and chemical changes occurring during preparation. The sort and parts of meat, and quantities used depend on the one hand on the pathophysiological changes in particular illness and on the other hand on patients nutritional status and individual needs. Diseases could be classified on those, in which the protein needs in patients are greater as in normal healthy people, and those with diminished, but biological vule increased protein needs or with the pathologic amino acids' metabolism. Iatrogenic malnutrition and increased catabolism in many illnesses and injuries need increased high biologic value proteins, with high essential amino acids, vitamin B12 and hems iron but little fat content, and easy to digest. The white turkey and chicken meat, veal, rabbit, trout and white fish meat, liver, kidney and heart are well suited to medical nutrition therapy. Beside this young baby beef, lamb and goat meat, horsemeat and young venison are used too. Only the best quality meat is applied. The consistency and the preparation mode are adapted to state of disease. Meat can not cover all the essential amino acid needs in protein reduction. The meat consumption is contraindicated in some inborn pathologic amino acid metabolism diseases too. It is advisable, that a patient consults the nutritionst-dietitian about the meat sorts and quantities needed.
