Abstract     The aim of the study was to establish the influence of seasonal fruit and vegetables' assortment on dietary fibres and mineral intake in diabetic diet planned with food exchange method. Energy, macronutrients, fibres, sodium, potassium, calcium, phosphorus, magnesium and zinc were analysed in 28 hospital diabetic diets (14 in summer and 14 in winter period) and evaluated by Recommendations for the Nutritional Management of Patients with Diabetes Mellitus (EASD 1995) and by SCFES Recommendations (1993). On an average the nutritive values matched the recommendations excepting sodium, phosphorus and zinc in women, which exceeded them signif- icantly. In summer food contained more sodium, potassium, magnesium, phosphorus and zinc, but in winter there were more dietary fibres and calcium. The ratios: sodium to potassium, calcium to phosphorus and calcium to proteins were closer to recommendations in winter than in summer. Winter diets significantly lacked magnesium. The seasonal assortment of fruit and vegetables influences the intake of minerals and dietary fibres. This should be taken into account in planning diets with food exchange method too.
