Abstract     The roots of chicory (Cichorium intybus L.) mostly contain inulin - a polysaccharide similar to starch, which chicory collects in its roots as a spare food. Inulin cannot be absorbed into the blood as the enzymes in the human digestive systerns cannot decompose it. Non-decomposed inulin in the large intestines is used for food by the bacteria there excreting different acids and other decomposition products of inulin. Recently, it has been found that inulin can play a successful role as nutritious fibres and is thus useful to many liv ing functions. Some studies have also shown that inulin inhibits the growth of existing tumours, not only in the intestines, but also in breasts and muscles.
