Abstract     Meat and meat products are frequently contaminated with different microorganisms, what is significant criterion of healthy and hygienic suitability. Healthy suitability and safety of food respectively are established by microbiological, examinations. Two statutes regulate the criteria of microbiological irrevocability. The statute about bacteriological conditions prescribes criteria for food on the market, the second one about veterinarysanitary inspection however criteria for some kinds of food at the producers. In both mentioned statutes the conceptions "microbiological" and "healthy" suitability are not understandably defined. Beside this, all microbiological standards in both statutes are not coordinated. Therefore the consisting legislation should be renovated and coordinated with EU directives.
