Abstract     Edible marine organisms (seafood) are considered to be a healthy and appreciated food, in which - as well as with alf other food - different general and more specific biological and other health hazards may also occur. Biological health hazards include the presence of certain bacteria, which may be divided according to their origin into those naturally present in (water) environments, and those, which do not primarily originate from (water) environment and are therefore common in all kinds of food. The presence of certain helmints (nematodes, cestodes and trematodes) represents parasitic health hazards.-Furthermore, biological health hazards include also the presence of certain enteric viruses, especially in shellfish, and the presence of different biotoxins and biogenic amines (histamin). The sanitary suitability of seafood and other foods is provided by regulations. By recognising health hazards, carrying out control measures and with hygienic handling of seafood the majority of health hazards can be controlled satisfactorily.
